Sunny's Quick Blueberry Pie

Quick Blueberry Pie

Hello to everybody! It's time for a new recipe, this one is really easy to make and doesn't take long at all.

Requirements:

  • 250 grams of flower
  • 125 grams of butter (room temperature)
  • 1 teaspoon of salt
  • 2 spoons of water
  • 1 egg
  • 2 spoons of sugar
  • 400 grams of Blueberries (prefer fresh ones, not from a can/jar)
  • 1/2 teaspoon of cinnamon
  • 50ml of Rum (it's best if you have a red colored rum)
  • 1 lemon



Lets do this the quick way..

First take a bowl and put the egg in there and mix it with a mixer for about 1 minute.
Now add the flower, the salt, the water and the butter and mix this whole thing for another 3 minutes on higher speed.

The mixture above shall form into a firm but flexible dough. Take this dough with your hands and make 2 big snowballs out of it. Now put the balls of dough in the fridge for about 10 mintes.

In the meanwhile take another bowl and mix in there the sugar, the blueberries, the cinnamon, the rum and squeeze the lemon innit (so you only need the lemon juice).
Mix this whole thing by hand and let it sit for +-5 minutes.

Take the dough out of the fridge and put it on the table. Now try to flatten both balls into 2 very thin layers. (like pizza base but much thinner).

Take a baking form and butter it or lay some baking paper on it.
Carefully place the first layer of dough inside. Poor the blueberry mexture on it and cover it all with the second layer of dough.

Bake this for about 20-25 minutes on 200 degree celcius pre-heated oven.

Put the pie in the fridge to cool a bit and it's ready to serve. Feel free to decorate with whatever you like by choice.
